Hong Shao

A savoury autumn tribute to Fan Changyu of Pursuit of Jade, inspired by her signature hong shao rou. Shaoxing rice wine, dark soy, and ginger showcase sweet and savoury braising elements, while the middle reveals a textured bite of pork floss and roasted pork fat.
