Mont Blanc

Another classic holiday bonbon interpretation, inspired by the cassis-mont blanc from Koji Tshuchiya of Musée Du Chocolat Théobroma: French chestnut with cognac, vanilla bean, and a touch of cassis/black currant.

Ingredients: milk chocolate, marrons au sirop, black currant puree, glucose, butter, cream, white chocolate, cognac, cocoa butter, vanilla bean, invert sugar
